Suitability of Triticale for Processing

The technological value of triticale is determined by its intermediate protein composition and specific grain morphology, which requires the adaptation of milling systems and monitoring of amylolytic activity.

The shriveled surface of triticale grain, caused by the loose attachment of the pericarp to the seed coat, complicates high-grade milling and endosperm separation, necessitating the use of expanded technological schemes with scouring and purifiers systems.

The protein-gluten complex of the crop is capable of forming gluten, but due to its unstable quality, the flour is more often used in blends with wheat. High amylolytic activity limits the use of the grain in its pure form, but allows it to be used effectively to liquefy dough with excessively strong gluten.

Due to the high endosperm yield, triticale is promising in cereal production, especially with high grain vitreousness. In the confectionery industry, the flour is in demand for products requiring reduced gluten content, and deep processing of the crop into starch is technologically comparable to the processing of wheat.
