Rice translucency

Oryza sativa L.

A technological quality indicator of rice that characterizes the packing density of starch granules and protein substances in the endosperm. It determines the head rice yield during milling and the grain's ability to retain its shape during cooking.

Rice translucency is determined on husked kernels through visual inspection of a cut surface or by candling with a diaphanoscope. According to GOST 10987-76, total translucency is calculated as the sum of fully translucent grains and half the quantity of partially translucent grains, expressed as a percentage. Indicator values for rice varieties can range from 40–60% to 95–98%.

This trait is a varietal characteristic that depends on agricultural practices, nutritional regimes, and climatic conditions. High translucency is positively correlated with the head rice yield during processing. At the same time, the formation of translucent endosperm is suppressed by low temperatures during the grain-filling period and premature drainage of water from paddy fields, which leads to the development of chalkiness.
