When consuming leeks, the main edible portion is the fleshy “shank”—the blanched pseudostem. Product selection depends on maturity timing: early varieties are characterized by a more tender structure without coarse fibers, making them suitable for salads, whereas late varieties have a dense consistency and are more frequently used for processing.

Organoleptically, leeks are valued for their mild, sweet flavor; however, as the plant ages, the leaves become coarse and develop an intense bitter aftertaste. Due to the specific structure of the pseudostem, within which soil particles and sand accumulate, thorough washing is required before consumption.
