The taste of turnips is determined by the presence of glucoraphanin and essential oils, the levels of which depend on cultivation practices. If moisture or nutrients are deficient, the roots become coarse and acquire a pronounced bitterness, rendering them unsuitable for consumption without heat treatment. For fresh salads, varieties with tender, sweet flesh and an absence of tough fibers are recommended, as well as Japanese leaf cultivars whose foliage lacks characteristic pubescence.

The quality of the harvest depends directly on the timing of the harvest: leaving the roots in the soil for too long leads to a loss of flavor characteristics and the coarsening of tissues. Due to the high content of essential oils, the consumption of raw turnips has limitations for those with gastrointestinal tract disorders, such as gastritis, peptic ulcers, and acidity issues, as the product can cause irritation to the mucous membranes.
