Suitability of turnips for freezing

Brassica rapa L. var. rapa (L.) Thell.

The suitability of turnip roots for freezing depends on selecting young, succulent, and healthy specimens without signs of lignification or bolting. Pre-blanching for three minutes is preferred to preserve organoleptic properties and nutrients.

In the reference 14 varieties crop Turnip, where this is mentioned in the description.

Only fresh roots with firm flesh are suitable for freezing, as old or fibrous turnips lose their consumer quality after thawing. Blast freezing at -18°C helps minimize the degradation of the product's cellular structure.

Blanching turnips is a recommended procedure to ensure consistent quality and color retention during long-term storage, although the process is technically possible without it. After defrosting, the product retains its structure and is suitable for further heat treatment, such as stewing, roasting, or preparing soups.
