The suitability of a peach for freezing is determined by the ability of the flesh to retain its structure and color after cell wall degradation, which depends on the firmness of the variety, the stone-freeness type, and the maturity stage of the fruit.

Peaches are characterized by a high tendency to lose texture during freezing due to the destruction of cell walls by ice crystals; therefore, varieties with firm flesh are preferred for processing. Suitability for freezing is also limited by the need to inactivate polyphenol oxidase and peroxidase enzymes, which cause browning of the flesh. Varietal differences in pH also play a role: white-fleshed varieties with low acidity levels require strict adherence to freezing temperature regimes to preserve commercial quality.

A critical success factor is the stage of maturity: underripe fruits do not develop sufficient flavor, while overripe fruits lose structural stability. Fruits that have reached consumer maturity while maintaining firmness are recognized as optimal raw material, which helps minimize product softening after thawing.
