Eggplant withstands raw freezing extremely poorly due to its high water content and specific cellular structure. The formation of ice crystals causes the rupture of cell walls, leading to an irreversible loss of turgor: upon thawing, the flesh loses its shape and acquires a watery, rubbery texture.

To maintain an acceptable product quality, preliminary heat treatment, such as blanching, roasting, or frying, is necessary. This process controllably breaks down cell walls in advance, which negates the fruit's vulnerability to low-temperature exposure.

The technological suitability of eggplant for freezing depends on the degree of fruit maturity. The use of overripe specimens with hard seeds and loose flesh is unacceptable, as this leads to a loss of commercial properties. Another important quality factor is the absence of bitterness caused by solanine, which requires preliminary preparation of the raw material.
