The Gabbiana variety (also known as Gabiana or Garessina) is an historical landrace variety selected through centuries of cultivation in the Tanaro and Bormida river valleys. Trees of this variety are well adapted to the cold climatic conditions characteristic of high-altitude valleys, such as Garessio.
The fruits of this variety are classified as small, which is a typical characteristic for chestnuts used for drying. The main advantages of the variety are considered to be the high sweetness of the kernels and the ease of peeling the pellicle, making it considered one of the best varieties for processing into flour. The variety is rarely encountered in fresh form.
