Rubinstar is a clone of the Jonagold variety that originated as a bud mutation. The tree is characterized as medium-sized with a more compact growth habit compared to the original variety. The variety is a triploid, which must be taken into account when selecting pollinators, as it cannot act as one itself.

The fruits are large, weighing 180–200 g, and have a round or round-conical shape. The main difference from the parent variety lies in the intense solid carmine-red blush with almost a total absence of stripes, which manifests earlier than in Jonagold.

Harvesting takes place in September–October; the fruits are suitable for long-term storage until April. The flesh is firm, juicy, cream-colored, and the taste is sweet-and-sour. The variety has average resistance to scab and powdery mildew and is intended for fresh consumption and processing.
