The Aivaliotiki tree reaches 8 meters in height and demonstrates good adaptation to the conditions of the Aegean region. The variety is dual-purpose: it is suitable both for consumption as table olives and for producing high-quality aromatic oil.

The fruits are characterized by medium size and an oil content in the range of 22–23%. The harvest period takes place from October–November to January–February, which makes the variety earlier-maturing relative to other local varieties, such as Kolovi.
