The Cacazzara tree has medium vigor, a dense and spreading canopy with an ascending habit. The trunk base is noticeably protruding above the soil. The variety is self-incompatible and requires pollinators.
Fruits ripen early, acquiring a wine-red or black color. The fruit flesh has an intense wine-red hue, which affects the staining of equipment during pressing. Oil yield is 15–16%. A characteristic feature is a high tendency for the fruit to drop before harvest.
The variety demonstrates an absence of alternate bearing, consistently producing a crop every year. The plant is characterized by high resistance to peacock spot, olive moth, and low temperatures, however, it is susceptible to olive fruit fly infestation.
