The Dent de Verrat variety is a local genetic resource distributed mainly in the Alpes-Maritimes department. The name of the variety translates as "boar's fang," which reflects the presence of a specific protrusion or "beak" at the apex of the fruits, allowing for visual identification of the variety.
The fruits of the variety are used in the production of olive oil, which is distinguished by intense notes of raw artichoke. A biological feature of the variety is its inability to act as a pollinator due to the absence or extremely low quantity of viable pollen.
