The RACCIOPPELLA variety is a traditional indigenous variety of the Benevento province. In farms, it is found in mixed plantations, playing an important role in landscape conservation and soil erosion protection in hilly areas.
The fruits are used to obtain extra virgin olive oil, characterized by a fruity aroma, herbaceous notes, and distinct hints of almond, apple, and mint. The oil is mild on the palate, with balanced bitterness and pungency. Consumption of fresh fruits is also possible.
Variety identification is difficult due to the similarity of biochemical and structural characteristics of the fruits to other varieties. Research is underway on the dynamics of polyphenol and chlorophyll accumulation in the fruits during their maturation process.
