The Tendellone variety is a natural local variety that is not a product of breeding. Olives of this variety are characterized by the absence of oleuropein, which is usually responsible for the bitterness of the fruit. They produce oil with subtle notes of almond and artichoke.
In agricultural production, the variety is used mainly as a component for blending olive oils of the Umbria region together with varieties such as Frantoio, Leccino and Moraiolo. Due to its biochemical features, the variety is widely used in fundamental scientific research on phenol metabolism and the olive transcriptome.
