Zarza is a local Spanish olive variety that is included in genetic resource collections, for example in Cordoba. The variety is recognized as an independent genotype, which is confirmed by studies using molecular markers and morphological descriptors in comparison with other varieties.

The fruits are distinguished by an unusual shape, different from the classic round one. At the moment, the variety is not a widely distributed commercial one, and its precise economic purpose as table or oil-bearing is not determined. Data on agronomic indicators, yield, and resistance to pathogens are absent in open sources.
