Paulsbirne is a late-ripening variety whose fruits reach harvest maturity at the end of October, and consumer maturity from December to March. The tree is vigorous with a spreading crown, blooming late, which allows it to avoid spring frosts.

The fruits are large, pear-shaped or top-shaped with ribbing, and have yellowish skin with a carmine-red blush and brown russeting. The yellowish flesh is moderately juicy, sweet with a slight astringency, and is distinguished by excellent keeping quality of up to 5 months.

The variety is classified as a culinary/processing type (Wirtschaftssorte) and is versatile for processing: suitable for the production of juices, dried fruits, and culinary use, although it can also be consumed fresh. The plant is characterized by regular high yields and resistance to diseases and pests.
