Rouge de Bordeaux is a non-hybrid winter variety that can also be cultivated as a spring crop. The plant reaches a height of over 90 cm and possesses resistance to drought and lodging. The color of the grain husks has a characteristic reddish hue.
The grain is distinguished by a high protein content. Flour from this variety has a pronounced taste with notes of nuts, cinnamon, and spices. Dough based on such flour is plastic during kneading, and gluten properties are considered more easily digestible compared to modern commercial wheat varieties.
