Assyrtiko is a vigorous, mid-late ripening variety with late bud break. It forms medium or large dense clusters with round berries having thick skins and juicy pulp. Upon full maturity, the berries acquire a golden hue.

The variety possesses high resistance to powdery mildew, downy mildew, drought, and strong winds. Due to the ability to maintain a high level of acidity even in hot conditions, it is suitable for the production of a wide range of wines, from dry mineral to dessert wines.

Wines from this grape are characterized by pronounced minerality, notes of citrus, green apples and flowers, as well as a propensity for long aging. In its homeland, the variety is traditionally trained in low-growing basket shapes to protect it from environmental impacts.
