The variety is an ancient form of the Syrah grape, whose origin is linked to the natural crossing of the Mondeuse blanche and Dureza varieties. The name is often associated with the Latin word serus, indicating the late ripening of the crop.
The plant differs from modern Syrah clones by its more compact bunches and small, round berries. The crop is characterized by lower productivity and higher requirements for growing conditions.
In recent decades, interest in this form has been revived as part of a movement to preserve historic winemaking heritage. Wine produced from these grapes is distinguished by a concentrated taste with pronounced minerality, and floral and spicy notes.
