Albillo criollo is a wine variety adapted to cultivation on volcanic soils and steep slopes of the Canary Islands. It is cultivated primarily in high-altitude areas, which contributes to slowed berry ripening and the preservation of a high level of acidity.
The plant forms small to medium-sized berries with golden-yellow skin. Wines produced from this variety possess aromas of white peach, citrus zest, dried flowers, fennel, and almonds, as well as a characteristic volcanic minerality and a light salty aftertaste.
