The variety originated from a natural cross between Pinot and Gouais blanc varieties and is considered a close relative of Chardonnay. It originates from the Lorraine region, France. The vines are characterized by medium to weak vigor. Bunches are medium-sized; berries are small, white-greenish in color, and round in shape.

Auxerrois belongs to early-ripening varieties and is well adapted to cool climates. The thick skin of the berries provides the variety with natural resistance to diseases; however, a tendency for flower/berry drop is observed during the flowering period. Yield is moderately high, though it requires restriction to obtain quality wine.

The purpose of the variety is wine production, often as part of blends or for sparkling wines. The finished wine possesses moderate acidity, a soft structure, and characteristic aromas of citrus, apples, and pears. It is important not to confuse this variety with Malbec, which is also called Auxerrois in some regions.
