The vines have low vigor. The leaf is round, three- or five-lobed, with dense pubescence on the underside. Bunches are medium-sized, cylindrical or cylindrical-conical, often winged, of medium density. Berries are dark violet-blue, round, with thick skin and a waxy bloom.
Late-maturing variety with moderate yield. Susceptible to downy mildew and Botrytis, and shows sensitivity to grafting onto modern rootstocks. It is distinguished by the ability of the berries to wither, which is traditionally used in Tuscan winemaking technology.
Wine grape variety for the production of red wines with aromas of red fruits, cherry, and soft tannins. There is also a separate white variety, Canaiolo Bianco, which is genetically unrelated to the black Canaiolo.
