Canaiolo bianco is a wine grape variety common in central Italy. Genetic studies have disproven the theory that it is a white mutation of the Canaiolo Nero variety. Most often, the name in the Orvieto region refers to the Drupeggio variety.
The variety is used exclusively in winemaking, primarily as an auxiliary component in blends. Medium-late ripening is characteristic of Drupeggio, which is often identified with this name. A single morphological description does not exist due to the heterogeneity of the group of varieties that have carried this name.
