The variety is native to Sardinia and is adapted to a hot, dry climate, preferring limestone and granite soils. The flower is hermaphroditic. Bunches are small or medium, conical-cylindrical, weighing 150–230 g. Berries are medium, round, purple-black in color with thick skin and a heavy bloom.

Cannonau is characterized by high and stable yields, as well as relative resistance to fungal diseases. Wines from this variety are noted for their deep color, high alcohol content, moderate acidity, and aromas of berries, spices, and herbs. It possesses good aging potential.
