The variety is a productive plant, genetically related to Riesling, with an early maturity group. The berries have thin skin, making the vine susceptible to powdery mildew and downy mildew, as well as sensitive to drought. The grape is well-adapted to cool climates and prefers soils based on shell limestone.
Elbling wine is characterized by a fresh taste with aromas of citrus, green apples, and pronounced minerality, while containing moderate amounts of sugar and alcohol. Currently, the variety is most widely cultivated in Germany and Luxembourg.
