The variety has ancient origins and a genetic connection to the Heunisch variety. The plant is characterized by vigorous growth. The leaves of the variety are large, round, three-lobed, and slightly lobed; the tip of the young shoot is covered with dense tomentose pubescence. The clusters are dense, the berries are greenish-yellow, medium-sized, and oval-shaped with thin skin.

The variety belongs to the early or mid-season ripening group and is distinguished by high yield. The plant is susceptible to major fungal diseases such as powdery mildew, downy mildew, and grey mold, and is also sensitive to magnesium deficiency.

Elbling is a wine grape variety that produces light, neutral wines with high, stable acidity and moderate alcohol content. Due to its properties, it is traditionally used in the production of sparkling wines or as a base component for blends.
