Gaidouria (also Gaidouria B) is an ancient indigenous variety from the Aegean Islands, primarily Santorini. The variety name translates as "donkey," which is associated with the fact that animals fed on the leaves of this plant. The variety is considered very rare and in some places almost extinct; its plantings are extremely limited.
The plant belongs to the early maturity group and is characterized as low-yielding and relatively resistant to diseases. When cultivated in an island climate, a low-growing "kouloura" training system is often used for protection from wind and sun.
The variety is used in winemaking, more often as a component of blends or for the production of Vinsanto dessert wines, although monovarietal wines can also be found. The berries have thin skins and sweet juice, and the wines produced from them are distinguished by softness, moderate acidity, light tannins, and honey and lemon aromas.
