The plant is late-ripening and possesses potential for adaptation to hot growing conditions. The yield level of the variety can be high, which requires control by winegrowers. Several studies note the variety's susceptibility to downy mildew.
Gajo Arroba is used exclusively as a wine grape variety for the production of wine characterized by freshness, juiciness, and pronounced fruit notes. The variety is authorized for use within the protected designation in the Arribes del Duero region, where it is used in blends and monovarietal wines.
