The Pinot Grigio variety originated as a natural genetic mutation of the Pinot Noir variety in the Middle Ages. The plant has vigorous growth and adapts well to cool climates and calcareous soils, however, it is characterized by relatively low yields.

The leaves are medium-sized, rounded, 3- or 5-lobed. The clusters are small or medium-sized, often cylindrical and very dense. The berries are small or medium, rounded or slightly elliptical.

The variety belongs to the early ripening group. It is resistant to winter frosts and spring frosts, but is sensitive to gray mold and downy mildew. It is used primarily for the production of white wines and has a high sugar accumulation potential.
