The variety is a natural genetic mutation of the red variety Pinot Noir. Its name translates as "grey" due to the characteristic shade of the berry skin, while the flesh remains white. The clusters of the variety are small or medium in size and are characterized by density.

Pinot Gris belongs to the Western European ecological-geographical group. The variety bud-bursts early, making it vulnerable to spring frosts, and it prefers a cool climate with limestone soils. Biologically, it has low yield and is susceptible to diseases such as powdery mildew, chlorosis, and viral diseases.

It is an early-ripening variety used in winemaking to create wines of different styles. The Italian Pinot Grigio style involves producing light wines with high acidity and citrus notes, whereas the Alsatian Pinot Gris style is characterized by full-bodied, more complex wines with honeyed undertones.
