The variety is an old local genotype adapted to the terroirs of Plešivica and Pokuplje. It belongs to technical varieties and is traditionally used in blends or for the production of sparkling wines.
In winemaking practice, the variety is valued for the pronounced acidity of its berries. In modern publications, Šipelj is considered part of the region's biodiversity and is used in traditional assemblages together with other historical varieties.
