To determine harvest dates, complex indicators are used: the iodine-starch test, which evaluates starch degradation, and the Streif index, which accounts for flesh firmness, sugar content, and the starch index. Technological cultivation features depend on the group: summer cultivars require rapid sale, whereas winter ones need a post-harvest ripening period.
