Grape Ripening Period

Classification of grape varieties based on the duration of the growing season from bud burst to technical maturity of the berries, expressed in days and the sum of active temperatures.

The grape ripening period is determined by the number of days from the start of bud burst to the onset of harvest maturity of the berries. To assess a variety's ability to ripen under specific climatic conditions, the sum of active temperatures (SAT) with a biological minimum of +10°C is used.

Varieties are divided into eight groups: from extra-early (up to 105 days, SAT 2000–2100°C) to very late (165 days or more, SAT from 3300°C). These indicators serve as a basis for selecting varieties for regional climates, planning agrotechnical measures, and determining the optimal harvest time.

To determine crop readiness, in addition to considering the varietal ripening period, analytical methods for monitoring sugar content, acidity, and pH are used, as well as visual assessment of skin color, seed condition, and the degree of lignification of the cluster rachis.
