Cold tolerance of spinach

Spinach seeds are capable of initiating germination at low positive temperatures, starting from +4°C. Vegetating plants in the rosette stage are resistant to short-term frosts in the range of –6°C to –10°C, and under certain conditions, they can withstand temperature drops down to –15°C.

In winter cultivation, spinach demonstrates the ability to overwinter once the plants reach the 5–6 leaf stage. Evaluation of cold tolerance in agronomic practice is conducted through field phenological observations of plant survival and their ability to maintain a marketable rosette in the early spring period compared to reference cultivars.
