Pear acidity is a key biochemical quality indicator that determines taste characteristics and suitability for processing. Fruits of cultivated varieties are characterized by a low content of organic acids, with typical values ranging from 0.12–0.4%.

To assess pear fruit acidity, a titrimetric method is used, in which the results are calculated in terms of the predominant malic acid. The acid content is expressed as a percentage, and the sugar-acid ratio is additionally used for a comprehensive taste characterization.

Typical acidity values for cultivated pear varieties range from 0.12 to 0.4%, with values above 0.5–1.0% considered high and below 0.3% low. This trait is a varietal characteristic, but it is influenced by growing conditions, fruit maturity, and storage technologies.

Low pear acidity provides a dessert flavor to the fruit and makes them valuable raw materials for baby and dietary food. Monitoring acidity during storage, including under controlled atmosphere conditions, helps to slow down metabolic processes and maintain the marketability of the produce.
