Almond oil content represents the lipid concentration in the nut kernel, expressed as a percentage of its mass. This indicator is a key criterion for nutritional value and the suitability of the harvest for industrial processing.

The fat content in sweet almond kernels varies in the range from 44% to 62% of the kernel mass. This indicator is not a strictly fixed genetic trait of a cultivar and demonstrates high sensitivity to external conditions, including geographical location, climatic factors, as well as irrigation and fertilization regimes.

To determine oil content under laboratory conditions, organic solvent extraction methods are used, as well as gas chromatography and gas chromatography-mass spectrometry. A decrease in values below 45–50% is often associated with insufficient water or nutrient supply to plants during the fruit development period.
