Suitability of raspberry for processing

Rubus idaeus L.

A complex indicator of raspberry fruit quality, depending on morphological parameters, color stability, biochemical composition, and the ability of the drupelets to maintain structure during various methods of industrial processing.

For the processing industry, raspberry fruits must have a mass of at least 3 grams, uniformity in size and shape, and contain a small number of seeds. A key criterion is the ability of the berries to maintain their structure after the removal of the receptacle and during thermal processing or flash freezing, as well as high stability of the anthocyanin color.

Suitability for freezing is determined by a low level of juice loss upon defrosting and the ability to maintain the integrity of the drupelets. In the production of purées, jams, and beverages, a distinct flavor, absence of off-flavors, and strictly defined values of soluble solids content and pH are of decisive importance. Due to the high susceptibility of berries to mechanical damage and microorganisms, technological suitability is inextricably linked to the shortest possible processing time after harvest.
