Pepper fruit cracking

A physiological disorder of pepper fruits caused by sudden fluctuations in water supply and high humidity. It manifests as skin ruptures, which reduces the marketability of the produce.

The cause of the defect is excessive root pressure, which occurs after heavy irrigation following a drought or under high atmospheric humidity exceeding 85%. Fruit tissues absorb moisture faster than the epidermis can stretch, leading to the development of cracks. Thin-skinned varieties show a particular susceptibility to cracking.

In variety testing practice, visual inspection is used to assess the defect, recording the nature and area of the damage. For quality assessment, a fruit is considered substandard if the area of surface cracks exceeds one-quarter of the surface. In scientific research, grading scales from 1.0 to 2.2 are used for analysis.
