For durum wheat, protein content is a determining factor for technological properties, as it is the protein complex consisting of gliadins and glutenins that forms the gluten network. Protein content below 10% is considered low, while a figure of at least 13% is deemed optimal for high-quality raw material, and first-class grain requires a level of 13.5% or higher on a dry matter basis.

Protein accumulation is influenced by agronomic factors, including nitrogen and sulfur availability, as well as the timing of top-dressing, especially during the grain-filling stage. When planning for high yields, a dilution effect is observed, where protein concentration may decrease, necessitating a careful balance in the crop's mineral nutrition system.
