Unlike other citrus fruits, lemons are rarely consumed as a standalone dessert fruit, more often acting as a flavoring additive or accent ingredient. When assessing quality for fresh consumption, the fruit must have high density and an intact rind structure without signs of albedo browning or sunken spots. The presence of defects, such as peteca, significantly limits the marketability of the fruit for this category of use.
In industrial variety testing for fresh consumption, key indicators are juice content, which must be at least 20–25%, and the intensity of aromatic properties. There are varietal differences: for example, the Meyer lemon, which has a thin rind and less pronounced acidity, is considered more often than other varieties as a product for whole consumption. To maintain quality in a fresh state, the fruit requires strict temperature control: at 7 °C, they remain suitable for up to 16 days, and at 12 °C — up to 30 days.
