The variety is dual-purpose and is used for both oil production and table olives. The tree is characterized by its large size and upright branch orientation. The variety enters the bearing stage early, but exhibits a tendency toward pronounced alternate bearing, and strong fruit attachment makes mechanical harvesting difficult.
Oil from Galega fruit is prized for its mild taste with notes of green leaves and apples, though the oil content of the fruit is relatively low. The fruit has a low flesh-to-pit ratio. The variety is susceptible to anthracnose, olive knot (tuberculosis), olive fruit fly, and scale insects, but shows resistance to verticillium wilt and leaf spot. It tolerates drought well, but is sensitive to cold and saline soils.
