Fruits of the Gordal variety are characterized by their large size, reaching a weight of up to 12 grams. They have an egg-shaped asymmetrical form with a rounded apex, and firm, fleshy, and crisp pulp. The tree possesses moderate vigor and an upright canopy of medium density.
The variety belongs to the late maturity category and is characterized by low, alternate-year productivity. The plant is resistant to low temperatures and leaf spot, but sensitive to drought and susceptible to olive knot and peacock spot.
Due to its low oil content (from 2 to 14%), the variety is not suitable for oil production and is grown exclusively for table purposes. The fruits are used for pickling and canning. Regional variants of the variety exist, such as Gordal de Hellín and Gordal de Granada.
