The Gordal Sevillana variety is traditionally grown in the Andalusia region. The variety name indicates the large size of the fruits, which have an average weight of 6–12 grams, and a firm, fleshy, and brittle texture.

The fruits of the variety contain about 22% fat and are not suitable for oil production. Due to the high content of bitter substances, they are inedible in their fresh state and require mandatory fermentation and brining.

Harvesting is carried out by hand before the stage of full maturity, which allows for the preservation of the integrity of the fruits, which are valued for their high taste qualities.
