The Grassois variety was formed through folk selection and adaptation to the soil and climatic conditions of the Alpes-Maritimes department and neighboring areas. It is a local cultivar that is considered in scientific studies as an independent genetic profile.
Data on morphological traits, such as tree height, ripening periods, or disease resistance, are practically absent in open publications. It is known only for the use of the variety for obtaining olive oil, which is confirmed by the results of chemical analyses of the fatty acid and triacylglycerol composition of the product.
