The Cassanese tree has an upright habit with a dense or medium-dense canopy. Fruits weighing 3–4 g have an ellipsoidal shape, often asymmetrical, with a characteristic protrusion at the apex. Upon ripening, the fruit color changes to wine-red or dark purple, and the flesh-to-pit ratio reaches 7:1.
The variety is self-incompatible and requires cross-pollination. It possesses resistance to peacock spot and olive scab, however, it is sensitive to low temperatures and the olive fruit fly. The oil of the variety is characterized by a fruity aroma with notes of artichoke, almond, tomato, and herbs, with an oil yield of about 18–20%.
