The Grignano tree has low vigor and an upright canopy shape. The leaves are elliptical and green-gray in color. The fruits are small to medium, weighing 2–3 grams, and acquire a dark purple hue upon ripening. The variety is self-incompatible; the varieties Leccino, Casaliva, Pendolino, and Trepp are recommended for pollination.
The plant is characterized by good resistance to low temperatures and certain diseases, such as peacock spot and olive knot, but it is sensitive to the olive fruit fly. The productivity of the variety is medium and can be irregular. The variety roots well, but requires careful pruning to prevent the vigorous growth of vegetative shoots.
The primary use of the variety is for the production of olive oil. The finished product has an intense flavor with spicy, bitter, and "green" notes, hints of almond, root vegetables, and a citrus aftertaste.
