The tree has high vigor and a dense, upright crown. The leaves are elliptic-lanceolate in shape, with medium width and elongated length. The fruits are large, with a weight of about 3.6 g, with a small pit relative to the pulp.
The variety is late-maturing, characterized by high yield with alternate bearing. It is self-pollinating with early flowering, although up to 25% of the pistils can be underdeveloped. The variety is sensitive to drought, olive fruit fly, and olive knot, has moderate frost hardiness, and adapts poorly outside its native region.
Oil from the fruits of the Maiatica variety has moderate fruitiness, a sweetish taste with piquant and spicy notes. The dense, fleshy texture of the olives allows them to be used for the preparation of traditional baked olives.
