Variety description

10 August 2026

The MADREMIGNOLA variety is a traditional native variety of Tuscany, typical for the hilly area around Pisa, from where its cultivation spread to the provinces of Siena, Florence, and Livorno. The tree has a semi-pendulous shape and a dense, compact crown. The fruits have an ellipsoidal shape and turn a uniform black color upon full ripening.

The plant belongs to early-ripening varieties with relatively late flowering. The yield is stable and good, however, the variety is characterized by a low oil output during processing. The resulting oil has a deep green color, fruity flavor, and pungency, which is why MADREMIGNOLA is often used in blends with other Tuscan varieties.
