The Montecalvo 3 variety is a local genotype identified during surveys of ancient olive trees in the Monte Calvo area (Emilia-Romagna region). The trees are adapted to local conditions and included in the Regional Register of Agricultural Genetic Resources.
The plant belongs to dual-purpose varieties, suitable both for oil production and for table use of the fruits. Olive oil of this variety possesses an intense fruity taste with pronounced piquant nuances, as well as notes of freshly cut grass, tomato, and artichoke.
