The term Mollar in olive growing indicates a type of fruit and brings together several local ecotypes, such as Mollar de Cieza from the Murcia region or Mollar de Córdoba from Andalusia. In some cases, the fruits can be used in blends for oil production.
The Mollar de Cieza variety is exclusively a table olive. Its fruits have a shortened ellipsoidal shape and large size; the pit is smooth with a thin tip. The harvest of this variety falls in August-September, when the fruits turn from green to yellow.
